Ingredients
  

  • 1 pound ground beef
  • 1 small onion finely chopped
  • 1/2 green bell pepper finely chopped
  • 2 cloves garlic minced
  • 8 oz tomato sauce No Salt added
  • 1 tablespoon tomato paste Low Sodium
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon mustard yellow or Dijon
  • pepper to taste
  • 1 tablespoon ground mustard powder
  • chopped chives for garnish
  • Baked Potato red potatoes, Hamburger buns or rolls, for serving
  • Optional toppings: shredded cheese

Instructions
 

  • Brown the Ground Beef: In a large skillet, cook the ground beef over medium-high heat until it's no longer pink. Be sure to break it apart with a spatula as it cooks, and drain any excess fat.
  • Add the Vegetables: Add the chopped onion and green bell pepper to the skillet with the cooked beef. Sauté for a few minutes until the veggies are softened.
  • Flavor with Garlic: Stir in the minced garlic and cook for a minute until it becomes fragrant.
  • Create the Sauce: This is where the magic happens. Add tomato sauce, tomato paste, apple cider vinegar and mustard to the skillet. Stir everything together until it's well combined.
  • Simmer and Season: Reduce the heat to low, and let the mixture simmer for about 10-15 minutes. Stir occasionally to let the flavors meld together. Season with ground mustard and pepper to taste.
  • Serve in Style: Spoon the Sloppy Joe mixture onto the vehicle of your choice. Potato or toasted hamburger bun. Top with chives and any addition topping of your choice. Note: Any additional toppings will need to be added to the sodium count.
