Brown the Ground Beef: In a large skillet, cook the ground beef over medium-high heat until it's no longer pink. Be sure to break it apart with a spatula as it cooks, and drain any excess fat.
Add the Vegetables: Add the chopped onion and green bell pepper to the skillet with the cooked beef. Sauté for a few minutes until the veggies are softened.
Flavor with Garlic: Stir in the minced garlic and cook for a minute until it becomes fragrant.
Create the Sauce: This is where the magic happens. Add tomato sauce, tomato paste, apple cider vinegar and mustard to the skillet. Stir everything together until it's well combined.
Simmer and Season: Reduce the heat to low, and let the mixture simmer for about 10-15 minutes. Stir occasionally to let the flavors meld together. Season with ground mustard and pepper to taste.
Serve in Style: Spoon the Sloppy Joe mixture onto the vehicle of your choice. Potato or toasted hamburger bun. Top with chives and any addition topping of your choice. Note: Any additional toppings will need to be added to the sodium count.
