Ingredients

  • 2 ripe avocados diced
  • 1 cup tomatoes chopped
  • 1/2 onion finely chopped
  • 1 jalapeño seeded and finely diced (more if you love extra heat)
  • Juice of 1 lime
  • 1/4 cup fresh cilantro chopped
  • 1/2 - 1 tsp chipotle seasoning to taste

Instructions

  • Start with the tomatoes, because we want all that juicy goodness at the bottom of the bowl. Toss them into your mixing bowl.
  • Add the chopped onion, cilantro, and jalapeno. I like to use my mini food processor.
  • Next comes the avocado—the hero of this salsa. We want nice, chunky pieces, so be gentle while stirring.
  • Squeeze that fresh lime juice all over. Not only does it add a pop of bright flavor, but it also keeps our avocado from turning brown too quickly (plus, I just love lime on pretty much anything).
  • Season with chipotle, adjusting to taste
