Summer Harvest Pasta Primavera

A great way to use up your abundance of veggies from your garden or the Farmer's Market.

Ingredients
  

  • 2 lbs tomatoes Costco Gourmet Medley
  • 3 med zucchini
  • 2 cloves garlic minced
  • 2 cups spinach chopped in rounds or half moons
  • 2 tbsp olive oil extra virgin
  • 1/4 cup basil fresh chopped
  • 1 tbsp oregano fresh chopped
  • 6 oz feta cheese with Mediterranean Herbs

Instructions
 

  • Preheat oven or grill to 350
  • Add all ingredients except Feta in a 9x13 baking dish
  • Stir in Feta cheese
  • Toss with olive oil
  • Bake for 30 minutes or until tomatoes are breaking down
  • Cook pasta until al dente
  • Save a couple of tbsp of pasta water for later then drain pasta
  • Stir pasta and pasta water into the veggie dish until well combined.
